Apple Cinnamon Quinoa Bites



INGREDIENTS:

•  1 cup cooked quinoa
•  1 cup quick oats
•  1/2 tsp cinnamon
•  1/2 tsp. nutmeg
•  3 Tbsp. brown sugar
•  1 Tbsp. granulated sugar
•  1 Tbsp. maple syrup
•  1 cup chopped apples
•  2 eggs, lightly beaten

INSTRUCTIONS:

• Preheat oven to 350°F.
•  Mix cooked quinoa and quick oats in a large bowl.
•  In a small bowl, combine  cinnamon, nutmeg, brown sugar and white sugar.
•  Add this into the large bowl, then add maple syrup, apples and eggs, and mix.
•  Spray mini muffin pan with non-stick cooking spray and fill with tablespoons of batter.
• Bake for 15-20 minutes and serve warm.

 Makes 24 pieces.
