INGREDIENTS:
• 2 very ripe bananas (about 1 cup mashed)
• 2-4 tablespoons milk, whole or 2%
• 4 oz plain yogurt, whole or 2%
• 2 1/2 cups all-purpose flour
• 4 Tbsp. granulated sugar
• 2 tsp. baking powder
• 1/2 tsp. salt
• 1 tsp. cinnamon
• 4 Tbsp. unsalted butter
• 1/2 cup chopped walnuts
OPTIONAL ICING:
• 1 Tbsp. salted butter
• 1 oz milk, whole or 2%
• 1/4 cup packed brown sugar
• 1/4 tsp. vanilla extract
• 2-4 oz confectioner's sugar
INSTRUCTIONS:
• Mash bananas and add enough milk to make one cup total.
• Stir in yogurt and set aside.
• In separate bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
• Cut butter into several pieces and mix into dry ingredients with fork or fingers.
• Stir banana mixture into dry ingredients and add walnuts.
• Turn dough out onto wax paper and shape into disk about 1 inch thick.
• Cover with wax paper and freeze for 30 minutes.
• Preheat the oven to 400°F.
• Remove wax paper and place dough on parchment paper lined baking sheet.
• Slice dough into eight wedges and pull apart slightly.
• Bake for 25-30 minutes, until firm to the touch with golden-brown edges.
• Optional: drizzle with icing.
