Creamed Corn Fritters

 


INGREDIENTS:

•  2 cups flour
•  1/4 cup corn meal
•  3/4 cup of milk
•  3 tsp. baking powder
•  1 tsp. salt
•  1/2 tsp. pepper
•  2 eggs, slightly beaten
•  1 12oz can whole kernel corn, drained
•  1 8oz can creamed corn
•  2/3 cup bacon, fried and crumbled
•  honey
•  powdered sugar


INSTRUCTIONS:

•  Sift dry ingredients.
•  Combine egg, milk, corn and bacon.
•  Mix wet ingredients into dry ingredients.
•  Drop by teaspoonfuls into hot oil (370°F).
•  Fry until golden brown.
•  Drizzle with honey and dust with powdered sugar if desired.

Makes 4 servings.
