Sweet Orange Quinoa Breakfast Muffins

 













INGREDIENTS:
•  1¾ cups of wholemeal flour 
•  ½ cup quinoa flakes
•  1½ tsp. cinnamon
•  1 egg
•  ½ cup sugar
•  ½ cup honey
•  2 tsp. baking powder
•   ½ teaspoon of baking soda
•   110ml of vegetable oil
•   Juice and zest of 2 oranges
•   1 cup of buttermilk

INSTRUCTIONS:
•   Preheat oven to 375°F and line a muffin pan with liners.
•   Combine flour, sugar, baking soda, baking powder, quinoa & cinnamon in bowl, and whisk.
 •   In a second bowl combine egg, buttermilk, oil, honey, orange juice & zest, and whisk.
•    Add this to the first bowl and mix until just combined.
•   Fill muffin liners almost full, then sprinkle with quinoa.
•   Bake 20 minutes or until tops are golden brown.

Makes 12 muffins.
