INGREDIENTS:
• 12 flour tortillas
• vegetable oil
• 8 eggs
• 4 medium potatoes
• 1 lb ground beef
• 1 bell pepper
• 1 medium onion
• shredded cheese of your choice
• salsa of your choice
• sour cream
INSTRUCTIONS:
• Dice potatoes, peppers and onion, fry in pan with oil over medium heat, set aside.
• Reuse pan to brown ground beef, set aside.
• Reuse pan again to scramble eggs.
• Mix potatoes, peppers, onions, eggs, beef & cheese, and distribute down the middle of tortillas.
• Top ingredients with salsa, tuck in ends and roll tortillas up.
• Eat immediately with sour cream, or wrap in foil and store in freezer.
Makes 12 burritos.
